I usually think about wine pairing from the food side first. A grilled steak, creamy pasta, spicy curry, fresh seafood, tomato-based sauce, or salty cheese board can all point you toward very different bottles.

A Few Simple Rules That Usually Help

Match the Weight

Bigger, richer foods usually need wines with more body or structure. Lighter foods usually work better with lighter wines.

Watch the Sauce

If the sauce is the strongest flavor, pair the wine with the sauce instead of only thinking about the meat or main ingredient.

Use Acidity

Acidic wines can brighten rich, creamy, fried, or tomato-based dishes and keep the pairing from feeling too heavy.

Be Careful With Heat

Spicy foods usually do better with lower alcohol, fruit-forward wines, off-dry whites, rosé, or sparkling wine.

How I Choose Wine for Dinner

When I am choosing wine for a meal, I usually do not start with a perfect rule. I start with the biggest flavor on the plate. Sometimes that is the meat, but often it is the sauce, spice blend, cooking method, or side dish.

Chicken in a lemony sauce needs a very different wine than barbecue chicken. Pasta with red sauce needs a different wine than creamy Alfredo. Steak with a peppery crust can handle more structure than a leaner cut with a lighter sauce.

That is the kind of practical pairing advice I try to focus on throughout Vino Critic: not just what wine can work, but why it works and when I would actually choose it.
