This Wine Got Better After It Had Time to Open Up
My first glass of Vina Robles Fore Estate Reserve Blend 2017 was on the first night, and I drank it using a wine aerator. It was solid right away, but I would not say it was spectacular at first. It tasted good, but it did not fully show what it had until the next day.
The second day was when this wine really impressed us. My wife joined me for a glass, and the wine had opened up quite a bit. It felt smoother, more complete, and more enjoyable than it had on the first night.
We also taste tested it next to a 2020 Treana Cabernet, and both of us enjoyed the Vina Robles Fore Estate Reserve Blend much more. That comparison made the wine stand out even more because we were tasting it side by side instead of judging it on its own.
Smooth, Medium-Bodied, and More Interesting Than Expected
This is a dry red wine, but it did not feel overly dry or harsh. The tannins were medium, and the mouthfeel was pretty smooth, especially after the wine had more time to breathe.
The fragrance that stood out most was blackberry. On the palate, I picked up oak, vanilla, and cigar notes. There was also a hint of spice that my wife and I could not quite put our fingers on, but we both really enjoyed it.
That surprised me a little because my wife does not typically like spicy wines. In this bottle, the spice was not aggressive. It added interest without taking over the wine, which made the blend more memorable.

For the price, this was a very impressive bottle. I believe we paid around $22, and at that price I think Vina Robles Fore Estate Reserve Blend 2017 absolutely punches above its weight.
It had more personality than I expected, improved noticeably after opening, and compared very well against another Paso Robles red we tasted alongside it.
This is exactly the kind of wine I like finding: affordable enough to buy again, but still interesting enough to feel like more than an everyday table wine.

Because this wine is made from Cabernet Sauvignon, Petite Sirah, and Petit Verdot, I would pair it with foods that can handle some structure, dark fruit, and spice. Steak is the obvious choice, but I would not limit it to only steak.

We also hoped to visit the winery in Paso Robles if time allowed. A bottle like this makes me more curious about the producer, especially because it delivered such good value at the price we paid.
