A Smooth, Approachable Paso Robles Cabernet
What stood out to me most about the Justin Cabernet Sauvignon 2017 is how easy it is to drink. Some Cabernet Sauvignon can feel too heavy, too tannic, or too serious for a casual dinner, but this bottle felt approachable while still having enough Cabernet character to make it enjoyable.
I picked up red and black fruit flavors, with black currant being the main aroma that stood out. The wine has a medium-bodied feel, which makes it more versatile than a huge, overly bold Cabernet. It still has enough structure for steak, but it does not feel like a bottle that has to be saved only for a special occasion.
For me, this is the kind of Cabernet that works well when you want a reliable red wine for dinner without overthinking it.
What I Would Pair With Justin Cabernet Sauvignon 2017
This is definitely a wine I would reach for with steak. Ribeye is probably my favorite pairing because the fat in the steak gives the wine something to work with, while the Cabernet brings enough fruit and structure to stand up to the meat.
Filet mignon also makes sense, especially if you are serving it with a richer sauce, roasted potatoes, mushrooms, or a side that brings some depth to the meal. I would also feel comfortable serving this with burgers, grilled steak tips, lamb, short ribs, or a charcuterie board with aged cheeses.
Best pairings:
Ribeye, filet mignon, grilled steak, burgers, lamb, short ribs, charcuterie boards, aged cheddar, Gouda, Manchego, and other firm cheeses.
Is Justin Cabernet Sauvignon 2017 Worth the Price?
At around $22, I think Justin Cabernet Sauvignon 2017 is a solid value if you want a recognizable California Cabernet that is easy to drink and dependable with food. It is not the most complex Cabernet I have ever had, but it does a lot of things well for the price.
I would buy it again when I want a reliable bottle for steak night, a cookout, or a dinner where I need a red wine that most Cabernet drinkers would probably enjoy.
Notes From Justin Vineyards
Justin Vineyards describes this wine as part of its 30th Anniversary Cabernet Sauvignon release, celebrating three decades of winemaking. The winery points to its limestone-rich soil, Paso Robles climate, hand-harvesting, hand-sorting, and small oak barrel aging as important parts of the wine’s character and structure.
From my experience drinking it, the wine does feel like a polished, approachable Paso Robles Cabernet that is built to be enjoyable with food rather than overly aggressive on its own.
